We're one week away from Super Bowl XLVII, and we're already cooking! This week's Heartland Cooks is a compilation exploring new takes on our favorite football food. Forget the quarterback - you'll have your own fans when you serve these delicious dips and fabulous finger foods!

Jalapeño Popper Dip

Ingredients:

  • 2 packages 1/3 less fat cream cheese, softened (8 ounce each)
  • 1 cup light mayonnaise
  • 1 can chopped green chilies, drained (4 ounce)
  • 1 can diced jalapeno peppers, drained (4 ounce)
  • ½ cup shredded Mexican style cheese
  • ½cup shredded 2% mozzarella cheese
  • 1 cup Panko bread crumbs
  • ½ cup freshly grated parmesan cheese

Directions:

Preheat oven to 350 degrees. Using an electric mixer, blend the cream cheese and mayonnaise until smooth. Stir in green chilies, jalapeno peppers, Mexican cheese, and mozzarella cheese. Spoon mixture into a baking dish sprayed with non-stick cooking spray.

Mix together the Panko crumbs and parmesan cheese. Sprinkle it over the cream cheese mixture. Spray the Panko and parmesan with a quick spray of non-stick cooking spray.

Bake for 25-30 minutes or until the mixture is hot and the topping is lightly browned. Serve dip with tortilla chips, toasted French bread, or crackers.

Extra Hot Buffalo Wing Pizza

Ingredients:

  • 2 chicken breasts
  • Olive Oil
  • ½ teaspoon Crushed oregano
  • ½ teaspoon onion powder
  • Pepper to taste
  • 1 cup Buffalo wing sauce
  • 4 tablespoons Sriracha chili pepper sauce
  • 2 Tablespoons melted butter
  • 1 Tablespoon garlic powder
  • 1/3 cup Ranch dressing
  • 2 cups mozzarella cheese
  • Blue cheese (optional)
  • Pizza crust (store bought)

Directions:

Preheat skillet, adding olive oil when heated. Slice two chicken breasts into bite size pieces and cook in skillet adding whichever spices you prefer (Drew suggests crushed oregano, pepper, and onion powder). As the chicken cooks, prepare the sauce and pizza dough or store-bought ready-made crust.

To make the Extra Hot Wing (pizza) sauce: combine buffalo wing sauce, Sriracha chili pepper sauce, melted butter, garlic powder, and of ranch dressing.

Spread sauce generously on the pizza crust. Top with mozzarella cheese, and crumbled blue cheese to taste. Coat each piece of chicken in any extra hot wing sauce and place on top of pizza.

Bake at 450 degrees for 8-11 minutes until the crust is golden brown (or as long as otherwise directed by pizza dough directions).

Remove pizza from the oven, drizzle ranch and small dots of Sriracha sauce on top.

Easy, Sweet n' Spicy Meatballs

Ingredients:

  • 1 bag frozen meatballs
  • 1 jar grape jelly (smaller size)
  • 1 bottle chili sauce (12-14 ounce)

Directions:

Dump all ingredients into crock pot and stir. Cook on low 6-8 hours stirring occasionally.

Bacon double cheeseburger dip

Ingredients:

  • 1 small onion, diced
  • 1 clove garlic, chopped
  • 4 ounces cream cheese, room temperature
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • ½ cup mozzarella, shredded
  • ½ cup cheddar cheese, shredded
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoon ketchup

Directions:

Preheat oven to 350 degrees.

Cook the ground beef in a pan over medium heat. Drain grease and set aside.

Cook bacon until crispy, about 6-10 minutes. Set aside. Drain all but one Tablespoon of grease. Add the onion and sauté until tender, about 5-7 minutes. Add the garlic and sauté until fragrant, about a minute.

Mix ground beef, bacon, onions and garlic, cream cheese, sour cream, mayonnaise, mozzarella, cheddar, Worcestershire sauce and ketchup and pour it into a baking dish.

Bake until the top starts turning a light golden brown and then sides are bubbling, about 20-30 minutes.

Pizza Cupcakes

Ingredients:

  • 1 can (8 oz) refrigerated crescent dinner rolls
  • ½ cup pizza sauce
  • ¼ cup mini pepperoni slices
  • ¼ lb. mild Italian Sausage, cooked and drained
  • ½ cup shredded mozzarella cheese

Directions:

Preheat oven to 375 degrees. Spray 8 regular-size muffin cups with cooking spray. Unroll dough; separate into 8 triangles. Press each triangle into a muffin cup.

In small bowl, mix pizza sauce, pepperoni, sausage and ¼ cup of the cheese. Spoon about 2 tablespoons mixture into each dough-lined cup; sprinkle each with about 1 teaspoon additional cheese.

Bake 16 to 18 minutes or until lightly browned. Immediately remove from cups and serve.
