Branson officials say they are cautiously optimistic about this year's tourist season even though the city continues to recover from a 2012 tornado and the loss of two of its biggest stars.
Branson officials say they are cautiously optimistic about this year's tourist season even though the city continues to recover from a 2012 tornado and the loss of two of its biggest stars.

This week's Heartland Cook comes from Perryville, Missouri. Sue Lukefahr's recipe has roots. Her carrot cookies are a family tradition. Sue says her mother always baked them for her, she baked them for her kids, and she expects her kids will bake them for their kids. For Sue, all the memories tied to this easy- to-make treat have made it her favorite recipe. Plus, they're really tasty too!
Sue's Carrot Cookies
Ingredients:
1/2 cup or 1 stick of melted margarine
1 cup of sugar
1 egg
1 can carrots (or 1 cup cooked fresh carrots)
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt (for cooked carrots, use 1 tsp. of salt)
2 teaspoons vanilla
1 teaspoon lemon juice (optional)
Directions:
Preheat oven to 350 degrees.
Mix the melted margarine, sugar and egg. Drain one can of carrots and mash into mixture with potato masher or fork. Sift flour, baking soda, baking powder and salt and add to mixture. If using cooked fresh carrots, add 1 teaspoon of salt). Add vanilla and lemon juice if desired.
Drop teaspoon-sized balls of cookie dough on ungreased cookie sheet. Bake 8-10 minutes.
Frost when cookies have cooled completely.
Sue's Simple Frosting Recipe
Ingredients:
1 cup powdered sugar
1/2 teaspoon vanilla
1 Tablespoon Milk or water
Directions:
Mix frosting to the consistency of a thick batter. Spoon on top of cookies.
