On this week's Heartland Cooks we're dreaming about Valentine's Day and our love of sweet treats. We've featured this week's cook on previous segments. she's known as the "Baking Queen" to some folks down in her hometown Chester, Illinois. Jeanne Wilson definitely earns her crown with this sinfully sweet, slightly salty, and oh so strawberry snack!
Jeanne's Chocolate-Covered Strawberry Crunch
Ingredients:
3 cups Special K® Red Berries cereal
1/2 cup crushed dry roasted cashews
1/4 cup sweetened coconut flakes
1 12 oz. bag semi-sweet chocolate chips
1/4 cup white chocolate chips
1 teaspoon shortening
Directions:
Cover a cookie sheet with tin foil and set aside.
In a medium bowl, mix Special K® Red Berries cereal, cashews and coconut. Set aside.
Warm heavy duty three-quart saucepan on low heat. Pour entire bag of semi-sweet chocolate in pan to melt. Stir constantly.
Remove pan from heat. Add cereal mixture, tossing until cereal is completely coated. Spread evenly on foil.
Melt white chocolate and shortening over low heat, stirring constantly. Drizzle melted white chocolate over chocolate-cereal spread.
Refrigerate at least one hour or until firm. Break into bite-size pieces and enjoy!
