JACKSON, MO (KFVS) -

This week's Heartland Cook is Christy Hendricks-Russell of Jackson, MO and KFVS. Christy is the Digital Content Director for kfvs12.com. In her off time, she loves to spend time in the kitchen. Her husband Josh loves the end product of her efforts! Christy says her Pumpkin Cheesecake Muffins are perfect for fall; in fact they're her husband's favorite deer stand treat. These muffins combine rich spiced flavors that are sure to put you in the mood for fall fun.

Ingredients:

(Filling)

  • 8 oz. cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla

(Muffins)

  • 1 3/4 cup all purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • 1 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon each nutmeg, allspice (pumpkin pie spice can also be used), and cloves
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 1/4 cups canned pumpkin (not pie filling)
  • 1/2 teaspoon vanilla
Directions:

Preheat oven to 350 degrees.

Line muffin tin cups with liners.

Prepare filling by beating together cream cheese and sugar first. Then add 1 egg and vanilla and beat again. Set aside.

In a different mixing bowl, whisk together flour, sugars, salt, baking soda, cinnamon, and spices.

In a third mixing bowl, blend oil, egg, pumpkin and vanilla. Add flour mixture a little at a time to pumpkin mixture and stir until well combined.

Fill muffin cups about 1/3 of the way full with pumpkin mixture. Spoon cream cheese filling over pumpkin, dividing evenly between all 12 cups. Spoon another drop of pumpkin batter on top of cream cheese filling. Pumpkin batter will not cover entire top.

Bake for 18-25 minutes.

Christy's Tip: I try to put more cream cheese in the middle and usually end up with extra pumpkin mixture for some plain pumpkin muffins. I also like to sprinkle cinnamon sugar over the top of the muffins before I bake them.
