Louisville girl's recipe takes her to White House

Posted: Updated:

LOUISVILLE, Ky. (AP) - An 8-year-old Louisville girl and her mother will have lunch with Michelle Obama after the girl's recipe was chosen for the first lady's Healthy Lunchtime Challenge.

Lucy Fairhead Hickerson and her mother, 45-year-old Elizabeth Fairhead, will join 53 other winners, ages 8 to 12, for the event on Friday.

The Courier-Journal (http://cjky.it/UdB5d1 ) says Lucy's winning recipe is called "Around the World in One Bite" and features foods from different cultures. It uses an egg roll wrap around sweet potatoes, kale, red peppers, brown rice, shredded chicken, crushed pineapple, cayenne peppers, green onions and cilantro.

Lucy says she's excited to meet Obama, and her mother says she's "crazy proud" of her daughter.
