Heartland Cooks 8/8/14 - Larra's Bourbon, Bacon & Dark Chocolate Chip Cookies

Larra Clover is a Heartland Cook in Ste. Genevieve who loves to bake. She is currently attending culinary school in St. Louis to hone her skills, but at home she has a couple little helpers that love to mix up a batch of tasty treats. Her two daughters helped her make her Bourbon, Bacon & Dark Chocolate Chip Cookies. Larra says these treats are designed to please an adult palate, but her kids did enjoy their time with mom in the kitchen.

Ingredients:

  • 5 Tablespoons Bourbon
  • 3/4 lb. Bacon (cooked & diced)
  • 2 1/2 cups All-purpose flour
  • 1/4 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1/2 cup Unsalted Butter
  • 1/2 cup Bacon Grease
  • 3/4 cup Sugar
  • 3/4 cup Light Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs
  • 8 oz. Dark Chocolate chips

Directions:

Preheat oven to 375 degrees.

In a medium sized bowl, combine flour, baking powder, baking soda and salt. Set aside.

In a large mixing bowl, add sugar, brown sugar, butter and bacon grease. Mix until well combined.

Add each egg, one at a time to the mixing bowl and mix well after each addition.

Add the dry ingredient mixture slowly, mixing until all flour is combined into the batter. Next, add the pre-cooked bacon bits and dark chocolate chips and stir.

Use a spoon 1 ½ inch balls of batter onto a parchment-lined or greased cookie sheet at least two inches apart.

Bake 7-10 minutes or until golden brown.

Allow the cookies to cool for two minutes on the cookie sheet before transferring them to a wire rack to cool fully before enjoying.

Recipe makes 3 dozen cookies.
